The idea of touring Kauai’s spectacular Waimea Canyon by helicopter seemed thrilling enough, but then I learned we could explore the 3,600-feet-deep gorge, dubbed the “Grand Canyon of the Pacific,” in a chopper with no doors. Nothing but the rush of wind in our faces to blur the view of its red-hued walls and verdant valley floor.
